Roasted Garlic Broccoli
When I was a kid I was convinced that I HATED broccoli. Now I am not a fan of that H word but I think that it was EXACTLY how I felt. I used to ask my parents for a dog so that it would eat the broccoli under the table without my mom knowing 🙂 Funny story, we got a dog when I was 12 and she also HATED broccoli…so I had to suck it up and eat it…either that or my mom would make peas…and that my friends was worse.
You can imagine my parents’ surprise when they found out I wanted to be a DIETITIAN…they were like “who are you and what have you done with our broccoli-fearing daughter?!?!”. Well, YEARS later I can happily say I am a broccoli and VEGETABLE enthusiast and only share my bacon with my dog…because she still is not a fan of broccoli and how can you deny that cute face!
Not only can broccoli be a DELICIOUS veggie it is also jam PACKED with nutrients, wahoo!!! You know when you get sick and people tell you to “take vitamin C”? What they mean to tell you is to “eat your broccoli”. That’s right, 1 cup of raw broccoli has 80+mg of vitamin C which is >100% of your DRI (Daily Recommended Intake). Whereas 4 oz. of orange juice (an actual serving size of juice) which I DO NOT RECOMMEND only has 60mg…and is jam packed with sugar…which also leads to sickness…so put that OJ down for the love of health and eat some broccoli!

When my clients and friends say they cannot stand vegetables I normally respond with “you are doing it wrong.” Vegetables are delicious, but if you are microwaving frozen veggies you are going to think they are soggy torture just taking up room on your plate. So, use the recipe below for whatever vegetable you like and I promise you will start finding vegetables are delicious and colorful treats for ALL of your plates…and I am not just saying that because I am a Dietitian…I am saying it from one converted vegetable hater to another…now eat up buttercups!
- 2 large heads Broccoli, roughly chopped
- 4 cloves garlic, minced
- 2 Tbsp. Extra Virgin Olive Oil
- 1/2 juice of fresh lemon
- Salt & Pepper, To Taste
- Optional: 2 Tbsp. Coconut Aminos
- Preheat oven to 350°F
- Mix all ingredients together in a large bowl
- Spread out broccoli evenly on a parchment (or silpat) lined baking sheet
- Place in oven for ~20 minutes or until broccoli starts to get slightly crispy, stirring once.
