It’s the newest but oldest craze around 🙂 Our ancestors ate what we call “nose to tail” in that they did not waste a single part of the animal they hunted as they respected the animal they killed and did not know when the next available food source was coming. The bones and organs were some of the most PRIZED possessions of said animal, shocked? Don’t be! The bones and organs are where most of the REALLY AWESOME nutrients lie. Bone broth has been getting some GREAT attention lately and Team Nutrition Genius could not be more excited! We love when actual health foods make a scene in the media because it means YOU will benefit and see it more often…remember this is NOT a fad and has been around F.O.R.E.V.E.R.
Here are some places it has been seen lately (and note I am not saying the information they provide is factual or the Bone Broth Bible…just showing that it’s hit the MAIN media!): Harper’s Bazaar, The Washington Post, Elle Magazine, Huffington Post, and MORE to come. This is a start and believe me I do NOT want you getting your main nutrition info from popular media outlets, but it’s a lot better that they are promoting REAL FOODS rather than nasty low-fat, vegetable oil laden “diet” foods….we have to start somewhere 🙂
Alright so what is “bone broth” you ask? It is the liquid that comes from slowly cooking mostly bones (some meat on it) with water and vinegar. Sounds simple, but hold on.
Bone broth has so many amazing qualities and has been touted by health professionals even dating back to Hippocrates, yes Hippocrates, you know that REALLY OLD GUY that said:
“Let food by thy medicine and medicine be thy food.”
Well this guy was around before you and I so let’s just say bone broth has been around FOREVER and a day….to be specific. You also may remember your mother giving you a cup of chicken noodle soup whenever you came down with a sickness. Now, unfortunately we have moved from healing bone broth to Campbell’s PROCESSED chicken noodle soup:
Now don’t get be wrong, your mom had the RIGHT idea…it’s just our food supply has gone to the factory and added all these chemicals and additives that no longer help HEAL you, instead they probably ruin any benefits the broth or stock would have had and then some. So let’s take a step back and figure out WHAT it is exactly that makes bone broth so healing for you not only when you are sick but also every day of the year 🙂 That’s right Pearl and I enjoy a daily dose of this food…or “superfood” if you want to make the media happy! My top 3 Bone Broth Benefits (try saying that 3 times fast!):
1) Jump for Joint Health
Your joint health depends on the strength and integrity of the collagen in your ligaments, tendons and beyond, and lucky for you, bone broth provides said collagen to keep you running like a well oiled machine.
This collagen is made up of a family called glycosaminoglycans..say WHAT…think of them as your support system in your joints. Some of you may have heard of glucosamine as your doc may suggest this for your ailing joints whether post injury or when arthritis starts brewing. Some may even point you towards…dun dun dunnnnnn Joint Juice ?! That’s right not only can the bone broth bring health to your joints and skin it can also heal up your gut! Your gut is your health and 70% or so of your immunity lies in there! So while I cannot grant you immunity I can give you my number 1 immunity protection and that is, you guessed it , BONE BROTH!!
You’ve read above about how collagen repairs your joints and skin, and good news, it does not play favorites! It also repairs your gut lining, hooray! There are also wonderful amino acids (the base of proteins) that are drawn from the bones in bone broth including glutamine, arginine, proline and glycine. These wonderful amino acids are so generous and help to heal up a leaky gut and protect you from further damage. We’ll go into these some other time…for now you’ll have to trust me!
I’d say with this 1-2-3 punch we can and WILL declare Bone Broth for the Win!
Ok now for your recipe, happy bone broth drinking/eating!
- 3-4+ lbs animal bones (including: beef, pork, chicken, turkey, etc.)
- 2 Tbsp. Apple Cider Vinegar
- 5-6 garlic cloves, crushed
- 1/4 tsp. fresh ground pepper
- dash of salt
- enough water to cover bones by at least 1 inch
- Place all ingredients in a crock pot, slow cooker or pressure cooker.
- Bring water to a simmer and cook for 8-24 hours depending on bone thickness (the thicker and denser, the longer you can cook).
- Strain broth into glass jars, allow to cool to room temp and refrigerate or freeze.
- Repeat process 2-3 times or before the bones start to break down and become brittle.
