Happy day after Thanksgiving TNG Fans! We hope you had a belly-filled day and are enjoying the leftovers on this fine FRIDAY…wait is this day significant?! Oh YEA it’s time for another DAILY DISH…you thought we were going to say some Black Friday reference didn’t you…NOPE…ain’t nobody got time for that!!

What we do have time for is sharing with you the yummy-delicious (real word) food BOTH of us consumed yesterday and we could not be more thankful for our plates 🙂

IMG_4304So this year Mama A got a nasty virus and when I got home…It was GAME ON! I have never EVER cooked Thanksgiving dinner as my mom is the best cook in the world and let’s us all veg out on Thanksgiving. Well not this year 🙁 Poor Mama A! So naturally, I wanted to make sure my whole family got fed real food…and I had HUGE shoes to fill (she may be all of 5 feet but her cooking shoes are like a size 15-1/2).

My brother and sister-in-law were SLIGHTLY nervous having me at the helm as it was only a few short years ago that I requested my mom make me ravioli….while the rest of the family feasted on the turkey dinner….my how far I have come!

The dinner was a complete SUCCESS! I will be bringing you the entire menu at a later date as I came up with most of it in my head and want you lucky ducks to enjoy the REAL FOOD deliciousness that ensued 🙂 I hope you all had an AMAZING Thanksgiving….and remember to spend time with the ones you love 🙂

Pearl’s Plate

IMG_20141127_080416999_HDRSadly I got snowed into Rochester on Wednesday night so I wasn’t able to make it home and help Mama Biebs do day-before prep. On Thursday I got up early and hopped in the car as soon as possible so I grabbed some portable snacks- an apple from a local farm and a small handful of raw almonds. I snacked on these on my drive (I know, I know, no dashboard dining! #dietitianfail) along with a coffee and water with magnesium powder.

As soon as I got to my parents house I got started on a gluten free stuffing. Mama Biebs’ makes this delicious German stuffing with sausage, cranberries, apples, onions, and spices and was not going to miss out! I wanted to make the gluten-free bread myself but since I was snowed in the night before I didn’t have the opportunity so I picked the bread up at Wegmans (Pearl & Sassy’s favorite grocery store) instead. Not my #1 choice but still better than how I would feel had I eaten the regular stuffing. And it turned out delicious! I even mixed in juices from the turkey which really helped give it the baked in turkey flavor. As the turkey was cooked with a gluten-containing stuffing this is *not* something someone with Celiac Disease should do. Gluten gives me some GI upset and pretty noticeable brain fog so I avoid it but since I do not have Celiac disease I can hack a little special occasion cross-contamination. A better solution would have been to make the gluten-free stuffing in the turkey and the other stuffing separately (or not at all 😉 ). IMG_20141127_120748731-001

Next I started working on the homemade cranberry sauce! As you know from Sassy’s Facebook post on cranberry sauce that stuff in a can is nothing but chemicals and high fructose corn syrup #ew. So instead I made it from scrach using only cranberries, orange juice, maple syrup, and a cinnamon stick, It turned out great!

Next it was time to hit up Papa Biebs’ wine cellar for some homemade Chardonnay aaaaaaand take some selfies with my precious nephews.

First up was a broccoli-cheddar soup with bacon and extra veggies which Mama Biebs made using a seasoning she got at an Amish store near our summer camp. I suspected it had flour in it so I did not eat it. We also had shrimp, a veggie platter, cheese and crackers (which I did not eat), tortilla chips and salsa and, much to my disagreement, icky processed/not real food somethingamabobs. But guess what………. Most of them didn’t get eaten! #realfoodforthewin!

On to dinner foods! Mama crushed out the turkey….

Also on our table was ALL THE CAHBSSS… In addition to stuffing we had mashed potatoes, sweet potatoes, and butternut squash.

We actually had so much food we completely forgot about a broccoli/cauliflower mix and a squash mix and never brought them to the table (we have two kitchens, things can get confusing). But don’t worry, friends. We are NOT about to let good food go to waste around here! As soon as dinner was done I got started on taking the turkey off the bones to make stock. Tomorrow we will use the leftover veggies to make a yummy turkey veggies soup that can be frozen and enjoyed long after this glorious holiday is over. I even saved the turkey liver! My nephew was curious about that one. I haven’t decided what to do with it yet but I will let you know!

And even a dietitian couldn’t forget dessert! Again, because of the snow I didn’t make the apple crisp I had planned on but what better Nutrition Genius-Approved dessert than fruit?!
